Thunderstorm Sunday

The beginning of August has brought some cooling rain, accompanied by some loud thunderstorms. Bringing contrast from a hot humid day with fluffy clouds turning into dark heavy pockets of rain. It makes it perfect for taking some time to go back indoors and connect with our body.

After a busy week and a Saturday visit to the city which turned into a 6 mile walk, we recharge the body and the mind with healthy food (ok, we kind of do that everyday). I cannot take credit for the cooking, I’m definitely the sous-chef.

Today it was the turn for a dish called African peanut stew, which has some sweet potatoes, ginger, garlic, spinach and of course peanut butter. The more colors your meal has, the healthier it is and it not only helps with the maintenance of your body, but also the health of your brain. The sweet potatoes for instance contain flavonoids and potassium, they are low in fat and are a good source of Vitamin A. The spinach also is a good source for Vitamin A as well as Vitamin K. One of my favorite meals.

In the past I never thought about adding colorful food into my meals and I missed some great tastes and benefits that now I’m glad I have incorporated into my diet.
